You’ll need cold brew coffee, a milk of your choice, maple syrup, pumpkin puree, vanilla and pumpkin spice. That’s all! The short ingredient list makes the whole thing come together in about 5 minutes. All of these ingredients are easily accessible at most grocery stores, or online from retailers like Thrive Market.
Cold Brew Coffee
There are a few different options when it comes to cold brew to use for this recipe. You can use a store bought cold brew or cold brew concentrate. Store bought iced coffee would work here as well. You can also make your own cold brew or iced coffee at home really easily.
The easiest way to make cold brew at home is to steep 4 tablespoons of coffee grounds in 16 ounces of water (2 cups) in a french press for about 12 hours, or overnight. Then you strain out the coffee grounds and chill the coffee or serve over ice when using it for something like this pumpkin spice cold brew recipe!
If you’re not that picky on cold brew versus iced coffee, you can chill regularly brewed coffee, and then use in this recipe and serve it over ice.
Alternative Types of Milk to Use
This pumpkin spice cold brew recipe is really flexible in terms of what milk you can use. You can go with whatever you have on hand, or whatever your dietary preferences and needs are. I prefer this pumpkin spice coffee drink with oat milk, but it’s great with anything that doesn’t have any other flavors in it, so don’t use a vanilla almond milk, for example.

Pumpkin Spice
Pumpkin spice is a common spice blend that many people already have, but if you find yourself without it, there’s no need to run to the store just for this recipe. It’s really simple to make your own blend of pumpkin spice seasoning with a few other spices. The pumpkin spice cold brew only uses 1/2 teaspoon, so you just need a small pinch of equal parts ground cinnamon, nutmeg, ginger and allspice.
How to Make Pumpkin Spice Cold Brew:
There are only 4 simple steps to follow to make homemade pumpkin spice cold brew from start to finish. The only equipment you need is something to blend the ingredients together. You can use a blender, handheld blender (immersion blender) or a handheld frother would work too if you’re in a hurry.
Step 1
The first step is to add all of the ingredients into a blender, except for the optional cinnamon you will use to top your cold brew. The items that will go into the blender include the cold brew, milk, maple syrup, pumpkin, pumpkin pie spice and vanilla.
Step 2
The second step is to blend your pumpkin spice cold brew until it’s creamy. This won’t take more than a minute or so.
Step 3
Once the coffee has been blended with the milk and pumpkin, pour the cold brew over ice.
Step 4
The final step is to simply add a dash of optional cinnamon on top before drinking!
Storing Instructions
Storing Leftover Pumpkin Spice Cold Brew:
To store any remaining cold brew you have left so it’s still good over the course of the next few days you need to simply make sure to transfer it into an airtight container and store it in the refrigerator. This can be a bottle or pitcher, so long as it has a lid with a seal. Do not store the cold brew over ice, just store the cold brew after blending.

Prior to serving you can either give the bottle it’s stored in a good shake or stir to reincorporate the ingredients, and if you want to froth it again, the little handheld frothers work perfectly for this. Just froth each serving individually after you’ve poured your next cup.
Making in Advance & Doubling the Recipe for Later:
The instructions for making this recipe in advance and for doubling the recipe so you have more pumpkin spice cold brew for later are the same instructions for if you are storing leftovers.
You will make the recipe as instructed by blending everything together, and then storing it in an airtight container in the refrigerator. It will need to be shaken or stirred well to reincorporate the milk with the coffee prior to pouring a cup.
How to Make the Best Pumpkin Spice Cold Brew:
- If you want a more pronounced pumpkin flavor, add 1 extra tablespoon of pumpkin puree, or an extra pinch of pumpkin pie spice.
- Don’t use canned pumpkin pie filling. Make sure to use just the pure pumpkin puree. The cans can sometimes look similar!
- You can adjust the sweetness of your cold brew by adding more or less maple syrup. If you don’t have maple syrup on hand, you could use brown sugar syrup or light brown sugar. Add it in slowly and add more brown sugar to your preference.
- If you’re keeping this recipe dairy-free, most grocery stores carry a dairy free whipped topping now if you want to make the pumpkin cold brew drink extra fancy.
- You can freeze this coffee drink if you don’t get to all of it within a few days. Freezing it in ice cube trays is a fun way to make your next cold brew coffee drink extra snazzy and delicious!

Ingredients
